I bought my own SSL Certificate, but my admin is still using your shared one. Is it possible to switch that or does it not matter?

Default Yes.
Yes, you can easily do this. Edit /admin/includes/configure.php and change the HTTP_SERVER from http://yoursite.com to https://yoursite.com

Replace yoursite.com with your actual domain name.
